Carrots, raw

2 medium, sliced

Red pepper

1 medium, finely chopped

Onion

160 g, chopped

Garlic

2 clove(s), crushed

Vegetable stock cube

2 cube(s), vegetable, make up to 1440ml with hot water

Cabbage

100 g, savoy, shredded

Tomato Purèe

2 teaspoon(s), level

Oregano, Dried

1 teaspoon(s), level, finely chopped

Basil, fresh

1 leaf/leaves

Parsley, fresh

25 g

Spinach

40 g

Courgette

2 medium, cubed

Instructions

Mist a medium sized pot with cooking spray and heat over a medium-low. Add the carrot, pepper, onion, and garlic and cook for 5 - 10 minutes, until softened, stirring occasionally.

Add the stock, cabbage, tomato puree, basil, oregano, and season. Bring to a boil over high heat. Reduce heat and simmer, covered, for about 15 minutes. Stir in the spinach and courgette and cook for 3-4 minutes, until tender.
