Ingredients

Onion

1 large, finely chopped

Chorizo Sausage

70 g, cut into small cubes

Chilli, green or red

1 individual, deseeded and sliced

Peppers, all types

2 medium, deseeded and sliced

Paprika

1 teaspoon(s), level

Oregano, Dried

1 teaspoon(s), level

Cayenne Pepper

½ teaspoon(s), level

Mixed Beans, cooked

1 can(s), large, drained, drained

Tinned Tomatoes

1 can(s), large

Tomato Purèe

1 tablespoon(s), level

Vegetable stock cube

½ cube(s), 200ml stock

Reduced fat soured cream

2 tablespoon(s), level

Instructions

  1. Mist a pan with cooking spray. Fry the onion over a medium heat for 6-8 minutes, until soft. Season, then add the chorizo, chilli and peppers. Fry for 2-3 minutes until the chorizo has released its oil.
  2. Stir in the smoked paprika, oregano and cayenne pepper and fry for 1 minute. Add the beans, tomatoes, tomato purée and stock. Season, bring to the boil, then simmer for 20-25 minutes, or until thickened. Serve with the soured cream.

Notes
