Ingredients
Dark Chocolate
100 g, broken into pieces
Honey
2 tablespoon(s), clear, or golden syrup
Cocoa Powder
2 tablespoon(s), level
Cornflour
2 teaspoon(s), level
Water
200 ml, For the Topping:
Egg, whole, raw
2 medium, raw
Muscovado Sugar
60 g
Cocoa Powder
2 tablespoon(s), level
Icing Sugar
2 teaspoon(s), level

Preheat the oven to Gas Mark 5/190°C/fan oven 170°C.

Put the chocolate pieces, honey or syrup, cocoa powder, cornflour and water into a small saucepan. Heat gently, stirring constantly, until the sauce is thick and smooth. Share between the 6 ramekins or heatproof glasses.

In a large bowl, whisk the eggs and sugar together using a hand-held electric whisk until pale, thick and very airy. This will take 4-5 minutes. Sift in the cocoa powder and fold in using a large metal spoon, so that the air is not lost.

Share the topping between the dishes. Stand them on a baking tray and bake for 8-10 minutes. Remove from the oven, sprinkle with icing sugar and serve immediately. Use light soft brown sugar instead of muscovado, if you prefer.
