Salt

Egg white, raw
50 g
Vanilla Extract

Preheat the oven to 180°C, fan 160°C, gas mark 4. Line a baking sheet with baking paper.

In a bowl, sift together the icing sugar, cocoa powder and a pinch of salt. Using an electric mixer on low speed, beat in the egg whites until blended. Increase the speed to high; beat for 1 minute.

Beat in the vanilla extract, then stir in the chopped walnuts. Drop tablespoonfuls of the dough onto the baking sheet, spaced well apart – you should have enough for 12 cookies. Bake for 12-15 minutes until shiny, cracked and firm to the touch. Leave on the baking sheets to cool completely.
