Carrots, raw
3 medium
Onion
1 medium
Vegetable stock cube
0.5 cube(s)
Coriander, fresh
20 g
Instructions

Put the carrots and onion in a small pan with 300ml stock.

Strip the coriander leaves from the stalks, then add the stalks to the pan. Bring to the boil. Reduce the heat and simmer for 20 minutes.

Let cool slightly before blending. Season, stir in the coriander leaves and serve.
