Tasty spiced chicken, red pepper and onion in a toasted pitta bread makes a speedy, satisfying lunch.


Ingredients
Chicken breast, skinless, raw
2 medium
Calorie controlled cooking spray

White pitta bread

Reduced Fat Mayonnaise
2 tablespoon(s)
Lime Juice, Fresh
15 ml
Garlic
1 clove(s), crushed
Lettuce
1 portion(s), iceberg, shredded
Red pepper
1 medium, deseeded and sliced
Red onion
½ small, finely chopped

Mist the chicken breasts with cooking spray and sprinkle over the Cajun seasoning . Mist a nonstick frying pan with cooking spray and put over a medium heat. Add the chicken and cook for 10-12 minutes, turning occasionally, or until the chicken is cooked through. Allow to cool slightly, then use 2 forks to shred and set aside.

Meanwhile, cut along one edge of each pitta to make a pocket. Lightly toast, then set aside and allow to cool slightly.

Mix the mayonnaise with the lime juice and garlic.

Spread the inside of the toasted pittas with the mayonnaise and fill with the shredded chicken, lettuce, pepper and a sprinkling of red onion, then serve.
