This is a really easy and fast way to make muffins. Make sure you are super-speedy though, as this recipe will take the full 20 minutes.

Plain White Flour
150 g
Baking powder
1½ teaspoon(s), level
Caster Sugar
50 g
Low Fat Spread
40 g
Skimmed Milk
100 ml
Egg, whole, raw
1 medium, raw
Vanilla Extract
1 teaspoon(s), level
Apple
1 medium
Banana
1 medium

Preheat the oven to Gas Mark 5/190°C/fan oven 170°C. Put 12 paper or silicone bun cases in the bun tray.

Sift the flour and baking powder into the mixing bowl and stir in the caster sugar.

Melt the low fat spread in the saucepan and pour it into the jug. Beat in the milk, egg and vanilla extract. Add the mixture to the dry ingredients, grating in the apple. Mash the banana and add it to the mixing bowl, stirring until just combined. Do not over-mix.

Spoon the mixture into the paper cases and transfer the tray to the oven. Bake for 15-18 minutes until risen and golden. Cool the muffins on a wire rack.
