Notes

Mist a large pan with cooking spray, cook the onion over a medium heat for 6-8 minutes, then add ginger, garlic, turmeric, ground cumin and curry powder & cook for 2 minutes. Tip in the tinned tomatoes, cauliflower, simmer for 25-30 minutes until cauliflower is tender. Add the fresh tomatoes & peas during the last 3 minutes of cooking time. Stir in the lime juice. Cook the microwavable brown rice to pack instructions, serve with the curry and a dollop of yogurt.
