How to BBQ fruit this summer

Donβt switch off the barbie just because the main meal is done. Keep it fired up to grill gorgeous summer fruits β the heat caramelises them, making them super-sweet. Add these seasonal fruits to your basket this month, too β theyβre also great to grill for dessert.
Hereβs how to pick and cook them:

1. Pineapple
Forget that myth about plucking a leaf from the crown of a pineapple to tell if itβs ripe! All pineapples youβll find in-store or at markets are ripe and ready to eat. Pineapple is great for grilling, too. Cut it into wedges and cook on the barbie until golden and caramelised. Serve with 1 tbs no-fat Greek-style yoghurt.

2. Apricots
When buying apricots, look for ones with a slight red blush. To speed up ripening if theyβre not ready, place in a paper bag, at room temperature, with a banana. To grill them, cut in half, remove stones and cook for a few minutes each side. Serve with a 40g scoop of low-fat vanilla ice-cream.

3. Plums
Look for plump, firm plums and when theyβre ripe to eat, place in the fridge for a few days. Try grilling halved plums on the barbecue for a few minutes each side, then drizzle with 1 tsp honey and top with 1 tsp finely chopped pecans.

4. Watermelon
If youβre buying a whole watermelon, it should sound hollow when tapped. When you get home, cut it up, cover and store in the fridge so itβs ready to munch on. Itβs also delicious grilled for dessert. Cut into wedges and toss in a little lime juice. Cook until lightly charred then top with chopped fresh mint and serve with a 45g scoop of lemon sorbet.
