Spicy pork with soba noodles

Mince is so yummy and with this quick to make dish you can make something that’s both creative and delicious. Inspired by Japan, the soy sauce, ginger and soba noodles are the true starts of the dish.

Ingredients

Canola oil

3 tsp, or sunflower variety

Red capsicum

1 small, finely chopped

Green shallot(s)

4 individual, sliced, green tops reserved

Garlic

2 clove(s), crushed

Fresh ginger

3 tsp, finely grated

Sambal oelek

1½ tsp, Indonesian chilli paste

Lean pork mince

500 g

Hoisin sauce

2 tbs

Reduced salt soy sauce

1 tbs

Soba noodles, dry

160 g

Sesame oil

1 tsp

Instructions

  1. Heat canola oil in a non-stick wok or large deep frying pan over medium heat. Cook capsicum, white and pale green parts of shallot, garlic, ginger and sambal oelek, stirring, for 1 minute. Add pork mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Stir in hoisin sauce and soy sauce.
  2. Meanwhile, cook noodles in a large saucepan of boiling water for 4 minutes until tender. Drain and rinse under hot running water. Drain well and toss with sesame oil.
  3. Spoon mince mixture over noodles and sprinkle with green part of shallot.

Notes

SERVING SUGGESTION: Steamed baby bok choy, choy sum or gai lan (Chinese broccoli). TIP: You can find sambal oelek in supermarkets or Asian groceries.
