Spicy pork and veggie lettuce wraps
2 tsp, finely grated
Lean pork mince
2 medium, cut into 1cm pieces
1 medium, cut into 1cm pieces
2 individual, thinly sliced
20 g, (12 individual leaves)
- Combine hoisin, sriracha and soy sauce in a small bowl and set aside.
- Heat oil in large wok over high heat. Stir-fry ginger for 10 seconds, until fragrant. Add pork, stir-frying for 2-3 minutes to break up mince and brown evenly. Add capsicum, stir-fry until combined, then add reserved sauce mixture and continue stir-frying for a further 1-2 minutes until pork is cooked and mixture is well combined.
- Remove from heat, stir in cucumber and shallots. Spoon into lettuce leaves to serve.
