Ingredients

Olive oil

2 tsp

Pork leg steak, raw

450 g, (buy 500g), fat trimmed

Red onion

1 large, quartered, thinly sliced

Dried apricots

12 whole, thinly sliced

Apple juice no added sugar

¾ cup(s), (180ml)

Fresh ginger

2 tsp, finely grated

Fresh thyme

1½ tsp, chopped

Cinnamon quill

1 whole

Fresh coriander

¼ cup(s), or basil

Lime(s)

1 medium, quartered

Instructions

  1. Heat oil in large non-stick frying pan over medium-high heat. Season pork with salt and pepper. Cook pork for 2 minutes each side or until golden. Transfer to a plate.
  2. Reduce heat to medium. Cook onion, stirring, for 8 minutes or until golden. Combine half of both the onion and apricots in a 4.5 litre (18-cup) slow cooker. Top with pork and pour over apple juice. Combine remaining onion, apricots, ginger and thyme in medium bowl. Spoon over pork and tuck in cinnamon stick.
  3. Cook, covered, on high for 3 hours (or low for 8 hours) or until pork is fork tender. Remove and discard cinnamon. Sprinkle with coriander and serve with lime wedges.
