Fast, easy and fresh Asian-style dinner that’s ready in 30 minutes.

Ingredients

canola oil

2 tsp, or sunflower oil

green prawns

500 g, peeled, deveined

Gai lan

1 bunch(es), (Chinese broccoli), cut crossways into 4cm pieces

garlic

2 clove(s), crushed

egg(s)

2 medium

fresh rice noodles

450 g

kecap manis

cup(s), (80ml)

fish sauce

2 tbs

fresh red chilli

1 whole

Instructions

  1. Heat a large wok over high heat. Heat 1 teaspoon of the oil. Stir-fry the prawns for 2-3 minutes or until they curl and change colour. Transfer to a plate.
  2. Meanwhile, cut the thicker broccoli stems in half. Add the stems to the wok and stir-fry for 2 minutes. Add the broccoli leaves and garlic and stir-fry for 1 minute or until just tender. Transfer to a plate.
  3. Add the remaining oil to the wok. Crack the eggs into the centre and stir. Cook for 30 seconds or until the egg is just set. Add the noodles, prawns and broccoli and stir-fry for 2 minutes or until heated through. Add the kecap manis and fish sauce. Toss to combine. Season with white pepper and serve with the chilli.

Notes

SERVING SUGGESTION: Chopped or pickled chilli and lemon wedges.
