Mild huevos rancheros
Canned red kidney beans, rinsed, drained
300 g, chunky (gluten free variety)
reduced-fat 15% cheddar cheese
⅓ cup(s), grated, (30g) grated
2 tbs, leaves
104 g, (4 x 26g tortillas), warmed
- Combine the beans, salsa and ⅓ cup (80ml) water in a deep non-stick frying pan over medium heat. Cook, stirring occasionally, for 5 minutes or until the mixture thickens.
- Using a large spoon, make 4 indents in the mixture. Gently break 1 egg into each indentation. Cook, covered, for 6-8 minutes or until the egg white is set and the yolk is still soft. Sprinkle with the cheese and coriander. Serve with tortillas.
