Bring all the big, bright flavours of a Greek appetizer platter together in a shareable layered dip. Serve at a party with veggie sticks and pita crisps for scooping, or layer into individual cups for grab-and-go snacks.

Ingredients

Pumpkin hummus

220 g

Lebanese cucumber

2 medium, halved lengthways, deseeded and chopped

Red onion

1 small, finely chopped

Tzatziki

220 g, dip

Chili peppers, (not in oil), drained

½ cup(s), mild, chopped, (40g)

Tomato(es)

1 large, halved, deseeded, chopped

Pitted green olives

cup(s), chopped

Reduced fat feta cheese

75 g, crumbled

Fresh flat-leaf parsley

2 tbs, chopped

Instructions

  1. Spread hummus over the base of a large glass serving bowl.
  2. Add layers of cucumber, onion, tzatziki, chilli peppers, tomato, olives and feta. Sprinkle with parsley. Cover and refrigerate until ready to serve.

Notes

PREP TIP: Deseeding the cucumber and tomato removes excess juices and prevents the dip from going soggy. Simply scoop out seeds with a teaspoon and discard.
