Create an Middle Eastern meal at home with this flavoursome lamb kofta and fattoush salad.

Ingredients

Lean lamb mince

500 g

Garlic

2 clove(s), crushed

Fresh red chilli

1 whole, deseeded, finely chopped

Ground cumin

1 tsp

Ground cinnamon

1 tsp

Fresh mint

2 tbs, chopped

Red onion

1 medium, half grated and half thinly sliced

Wholemeal pita bread

80 g, (2 x 40g) split

Cherry tomatoes

450 g, halved

Lebanese cucumber

½ medium, sliced

Fresh flat-leaf parsley

2 tbs, chopped

Olive oil

1 tsp

White wine vinegar

1 tsp

Ground sumac

1 tsp

99% fat-free, plain or natural yoghurt, unsweetened

100 g

Fresh lemon rind

1 tsp, finely grated

Oil spray

1 x 3 second spray(s)

Instructions

  1. Preheat grill on high. Line grill tray with foil. Combine mince, garlic, chilli, cumin, cinnamon, mint and finely grated onion in a bowl. Divide into 8 and shape each portion around a skewer. Grill for 8-10 minutes or until cooked through.
  2. Line tray with more foil and lightly spray with oil. Grill pita bread, turning once, until golden. Cool. Break into bite-sized pieces.
  3. Combine tomatoes, cucumber, parsley and remaining thinly sliced onion in a bowl. Whisk oil, white wine vinegar and sumac together in a jug. Add to salad with pita bread and toss.
  4. Combine yoghurt and lemon rind in a bowl. Season with salt and pepper. Serve koftas with fattoush and lemon yoghurt.
