Honey roasted baby carrots with almonds

Reduced fat oil spread
1 tsp, finely grated
- Preheat oven to 200°C or 180°C fan-forced. Place carrots on a large baking tray.
- Place canola spread, honey and lemon rind in a small microwave-safe bowl. Microwave on High (100%) for 20 seconds or until spread has melted.
- Pour mixture over carrots and toss to coat. Season with salt and pepper. Bake for 20 minutes.
- Sprinkle with flaked almonds and bake for 8–10 minutes or until carrots are tender and almonds are golden. Serve.
