Ingredients

Red onion

2 medium, cut into thin wedges

Yellow capsicum

1 medium, thinly sliced

Red capsicum

1 medium, thinly sliced

Egg(s)

8 medium

Rocket

40 g, baby variety

Reduced fat feta cheese

75 g, crumbled

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a large frying pan with oil and heat over medium heat. Cook onions and capsicum, stirring occasionally, for 10 minutes or until softened and lightly browned, adding a little water if needed.
  2. Meanwhile, lightly spray a large non-stick frying pan with oil and heat over medium heat. Fry eggs for 2-3 minutes or until cooked to your liking.
  3. Serve capsicum mixture with eggs, rocket and feta cheese.

Notes

SERVING SUGGESTION: Toasted wholegrain sourdough bread. TIP: Scatter with 2 tbs chopped pitted black olives when serving.
