Cheesy garlic cloud bread

To ramp up the flavour of these light and tasty morsels, try whisking in a pinch or two of finely chopped fresh oregano, rosemary or basil with the egg yolks and cream cheese.

3 medium, separated
Light cream cheese
2 tbs
Reduced fat oil spread
40 g, melted
Mozzarella
150 g, piece, cut into 12 slices
Grated parmesan cheese
¼ cup(s), (20g)
Baking powder
½ tsp
Garlic powder or flakes
1½ tsp, (powder)
Dried oregano
1½ tsp
Oil spray
1 x 3 second spray(s)

Preheat oven to 150°C. Line a large baking tray with baking paper and lightly spray with oil.

Whisk egg yolks and cream cheese in a small bowl until smooth. Season with salt and pepper. Beat whites and baking powder in a large bowl with electric beaters until firm peaks form. Gently fold in egg yolk mixture with a rubber spatula. Spoon 12 even mounds of mixture onto prepared tray. Bake for 18-20 minutes, until puffed and lightly browned. Remove from oven.

Preheat oven grill to high. Combine oil spread, garlic powder and oregano in a small bowl. Gently brush over each bread, then top with mozzarella slices. Place under preheated grill for 1-2 minutes, until cheese melts. Sprinkle with parmesan. Serve warm.
