Fruit and grain snack bars
Rolled oats, dry

½ cup(s), (75g)
Wheat bran, unprocessed
¼ cup(s), (30g)
50 g, or walnuts, chopped
Skim milk powder
½ cup(s), (50g)
Plain wholemeal flour
1 medium, ripe, cut into chunks
Vanilla bean extract, alcohol free
- Preheat oven to 180°C. Lightly spray a 20cm x 30cm slice tin with oil and line base and sides with baking paper, extending paper 2cm above the edge of tin.
- Process dried fruit, oats, sunflower seeds, bran, nuts, milk powder, flour, cinnamon and ½ teaspoon salt in a food processor until dried fruit is finely chopped. Add banana, eggs, maple syrup and vanilla and pulse until just combined.
- Press mixture into prepared tin. Bake for about 15 minutes or until golden and firm when lightly touched with fingertips. Place on a wire rack and cool completely in the tin. Use lining paper to lift slice from the tin. Cut into 32 bars.
