Chia-crusted salmon with tomato, basil and spinach rice

Ingredients

Chia seeds

1 tbs, black

Skinless salmon

500 g, 4 x 125g fillets

Olive oil

2 tsp

Garlic

3 clove(s), thinly sliced

Cherry tomatoes

250 g, halved

Microwave basmati rice

250 g

Baby spinach

120 g

Fresh basil

2 tbs, chopped

Lemon juice

1 tsp

Reduced salt soy sauce

2 tsp

Oil spray

2 x 3 second spray(s)

Instructions

  1. Place chia seeds on a large plate. Dip 1 side of salmon fillets in chia seeds.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium-high heat. Cook salmon, chia-side down, for 2 minutes. Turn salmon and cook for 2 minutes or until cooked to your liking.
  3. Meanwhile, heat oil in a large saucepan over medium heat. Cook garlic and tomatoes, stirring, for 2 minutes or until tomatoes have softened. Add rice, spinach, basil, juice and soy sauce and cook, stirring, for 2 minutes, or until heated through. Top rice mixture with salmon to serve.

Notes

SERVING SUGGESTION: Steamed broccolini. Add it: ½ cup (60g) frozen green peas (thawed) with tomatoes and garlic in Step 3. Swap it: Salmon for 4 x 150g skinless lean chicken breast fillets (fat trimmed).
