Ingredients

Egg(s)

1 medium, lightly beaten

Potato(es)

140 g, (1 cup), peeled, coarsely grated

Extra light cheddar cheese

¼ cup(s), grated, (30g), grated

Green shallot(s)

2 individual, finely chopped

Skim milk

3 tsp

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat mini waffle maker (10cm diameter) and lightly spray both cooking surfaces with oil.
  2. Combine egg, potatoes, cheese, shallots and milk in a large bowl. Season with salt and pepper and mix well.
  3. Spread ¼ cup of the mixture onto the bottom cooking surface of the waffle maker. Pull cover down to enclose waffle. Cook for 3-4 minutes, until golden brown and cooked through. Using a silicone spatula, transfer waffle to a plate and cover to keep warm. Repeat with remaining batter to make 4 waffles in total, lightly spraying cooking surfaces with oil again halfway through. Serve.
