Ever thought of adding bacon to your pancake stack? Sweet and salty unite to create an amazingly delicious savoury brunch.


Shortcut bacon

2 slice(s), (2 x 30g slices) fat-trimmed

97% fat-free cottage cheese

180 g


1 medium

Skim milk

¼ cup(s), (60mL)

White self-raising flour

½ cup(s), (75g)

Maple syrup

1½ tbs, to serve

Oil spray

1 x 3 second spray(s)


  1. Heat a small frying pan over medium-high heat. Cook bacon for 4-5 minutes or until golden. Thinly slice.
  2. Whisk cheese, egg and milk in a large bowl until combined. Stir in flour until combined. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Spoon 2 tablespoons of batter into the pan and cook for 2-3 minutes each side or until golden and puffed. Cook remaining batter to make 8 pancakes in total.
  3. Top with bacon and drizzle over maple syrup to serve.
