Transform avo on toast by mixing in ricotta and fresh basil for an extra tasty, creamy topper.

Ingredients

Avocado

½ medium

Lemon juice

1 tsp

Reduced-fat ricotta cheese

50 g

Fresh basil

2 tbs, shredded, plus extra leaves to garnish

Sourdough, rye

80 g, (2 x 40g slices), toasted

Cherry tomatoes

125 g, mixed medley, halved

Olive oil

½ tsp

Lemon(s)

1 medium, cut into wedges, to serve

Instructions

  1. Roughly mash avocado and lemon juice in a medium bowl. Stir in ricotta and basil. Season with salt and pepper.
  2. Top toast with avocado mixture and tomatoes. Sprinkle with extra basil and drizzle with oil. Squeeze over lemon wedges and season with pepper to serve.

Notes

TIP: Got leftover avocado? Simply wrap it in foil, scrunching the edges together to form a tight seal and prevent any air getting in (which is what makes avocado turn brown). Store in the fridge for up to 2 days.
