All-in-one prawn pasta

Add some variety to your winter dinners with this pasta dish. This one-pot dish provides the comfort of a winter meal, but with the addition of prawns, basil and chilly, it also has the fresh tastes of summer.

Ingredients

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Leek

2 whole, thinly sliced

Fresh thyme

1 tbs, leaves

Garlic

2 clove(s), crushed

Fresh red chilli

1 whole, deseeded, finely chopped

Cherry tomatoes

500 g

Tomato paste

1 tbs

Dry pasta

240 g, Spaghetti

Raw peeled prawns

300 g, peeled, tails intact

Fresh basil

cup(s), small leaves

Instructions

  1. Heat oil in a large saucepan over medium-high heat. Cook onion, leek, thyme and garlic for 7 minutes or until softened. Add chilli and cook for 1 minute or until fragrant.
  2. Add tomatoes, tomato paste, 3½ cups (825ml) water and spaghetti to pan and bring to the boil. Boil, uncovered, stirring regularly, for 8 minutes or until pasta is almost tender and sauce has thickened.
  3. Add prawns and cook, uncovered, for 2 minutes or until prawns are cooked and pasta is tender.
  4. Meanwhile, shred half the basil. Stir shredded basil through pasta. Serve sprinkled with remaining basil.

Notes

SERVING SUGGESTION: Garden salad drizzled with lemon juice. TIP: Stand uncooked pasta upright in the mixture until the bottom half is soft enough to bend without breaking. Stir pasta regularly so it cooks evenly and doesn’t stick together.
