All-in-one prawn pasta
1 medium, finely chopped
2 whole, thinly sliced
2 clove(s), crushed
Fresh red chilli
1 whole, deseeded, finely chopped
Dry wholemeal pasta
300 g, peeled, tails intact
⅔ cup(s), small leaves
- Heat oil in a large saucepan over medium-high heat. Cook onion, leek, thyme and garlic for 7 minutes or until softened. Add chilli and cook for 1 minute or until fragrant.
- Add tomatoes, tomato paste, 3½ cups (825ml) water and spaghetti to pan and bring to the boil. Boil, uncovered, stirring regularly, for 8 minutes or until pasta is almost tender and sauce has thickened.
- Add prawns and cook, uncovered, for 2 minutes or until prawns are cooked and pasta is tender.
- Meanwhile, shred half the basil. Stir shredded basil through pasta. Serve sprinkled with remaining basil.
