Radish pickle and cream cheese rice cake

1 large, thinly sliced

red onion

¼ small, thinly sliced

apple cider vinegar

brown rice cakes

extra light cream cheese

1 tbs

fresh dill

1 tsp, springs


Place 1 small red radish (thinly sliced) and 1/4 red onion (thinly sliced) in a medium bowl. Add 2 tbs apple cider vinegar and season with salt and pepper. Set aside for 15 minutes or until soft. Drain well. Spread brown rice cake with 1 tbs cream cheese. Top with radish mixture. Sprinkle with dill sprigs to serve.
