Skinless chicken breast

Choy sum

Cooked brown rice

Place 150g lean chicken breast fillet in a small saucepan and cover with cold water. Bring to a simmer and cook for 3 minutes. Stand in hot pan for 10 minutes. Set chicken aside and bring liquid to the boil. Add bunch Asian greens (such as Choy sum or bok choy) and cook for 2-3 minutes, then drain. Serve chicken (thickly sliced) with ½ cup (85g) steamed brown rice and vegetables drizzled with 1 tbs oyster sauce combined with 1 tsp soy sauce and 1 tsp oil. Sprinkle with fresh coriander.
