Notes

Heat oil in a small nonstick skillet over medium-high heat. Add green beans, scallion, salt and pepper; cook, stirring frequently, until beans are crisp-tender, about 1 minute. Pour in egg substitute and sprinkle in half of cheese; cook until bottom is lightly browned. Flip omelet and cook until browned on other side; garnish with remaining cheese.
