Notes

Combine tomatoes, broth, spinach, shrimp, oregano, salt and pepper in a saucepan. Bring to a simmer. Simmer 8 minutes or until shrimp are cooked through. Sprinkle with feta cheese just before serving. Yields 2 servings.

Time-Saver tip: You can use 8 ounces frozen, cooked shrimp instead of fresh shrimp. Just add the shrimp to the soup, simmer to defrost and heat through.
