olive oil

1 tsp, (extra virgin)

orange zest

½ tsp, (or clementine zest)

table salt

1 pinch(es), (or to taste)

black pepper

1 pinch(es), (or to taste)


1 small, (seedless, peeled, chopped)

slivered almonds

1 Tbsp, (toasted)


1 Tbsp, (chopped)


Heat water in microwave until boiling hot; pour over couscous in a wide shallow bowl. Drizzle with oil; sprinkle with zest, salt and pepper. Cover and let sit for 5 to 10 minutes; fluff couscous with a fork. Add clementine, almonds and cilantro; gently toss to coat.
