1 medium, (white and green parts; chopped)

firm tofu

½ cup(s), (diced)


Combine broth, pepper flakes, ginger, boy choy, scallion and tofu together in a medium saucepan; simmer for 5 minutes for flavors to blend. Remove ginger slices before serving. (INGREDIENT SWAP/ADDITION OPTIONS: Substitute baby spinach leaves for the bok choy if you prefer. Add 1/2 cup of cooked brown rice for a heartier soup.)
