Coat a nonstick skillet with cooking spray. Add bacon and warm over low heat, 1 minute per side. Place lettuce on a small plate. Combine mustard and mayonnaise together in a cup; spread mixture over lettuce. Top with bacon and tomato; fold up lettuce to enclose filling.
