Zesty tomato salad
Make the most of the delicious vine-ripened tomatoes that are available all year round. We've jazzed them up with some cucumber, onion and a little lemon zest.
4 medium, finely chopped
1 extra large, deseeded, cut into small cubes
½ medium, finely chopped
1 teaspoon(s), rind
- Toss the tomatoes, cucumber, onion and zest in a large bowl. Season to taste with salt and pepper. Allow to stand at room temperature for 30 minutes before serving.
Try adding chopped black olives through this tomato salad plus some freshly chopped oregano for a Greek influence.
