Zesty strawberry & blueberry parfait
225 g, hulled and quartered, plus extra to decorate
1 teaspoons, level
0% fat natural Greek yogurt
½ zest(s) of 1
Asda Smart Price Madeira Cake
75 g, sliced thinly and cut into small squares
10 g, crushed
50 g, mixed with 1 tsp cold water
- In a food processor, whizz 125g of the strawberries with the icing sugar, to form a purée.
- In a bowl, whisk the cream then and fold in the yogurt and lemon zest.
- To assemble, layer the fruit, lemon cream, purée, cake, meringue and curd in 4 serving glasses. Top with the extra strawberries and chill in the fridge until ready to serve.
