Ingredients

Strawberries

225 g, hulled and quartered, plus extra to decorate

Icing Sugar

1 teaspoon(s), level

Whipping Cream

75 ml

0% fat natural Greek yogurt

200 g

Lemon

½ zest(s) of 1

Blueberries

200 g

Asda Smart Price Madeira Cake

75 g, sliced thinly and cut into small squares

Meringue Nests

10 g, crushed

Lemon Curd

50 g, mixed with 1 tsp cold water

Instructions

  1. In a food processor, whizz 125g of the strawberries with the icing sugar, to form a purée.
  2. In a bowl, whisk the cream then and fold in the yogurt and lemon zest.
  3. To assemble, layer the fruit, lemon cream, purée, cake, meringue and curd in 4 serving glasses. Top with the extra strawberries and chill in the fridge until ready to serve.
