Zesty asparagus, beans & peas

Ingredients
Green Beans
200 g
Asparagus, raw
250 g, asparagus tips, halved lengthways
Peas, fresh or frozen
200 g
Mint, Fresh
1 tablespoon(s), chopped
Lemon
1 zest(s) of 1
Red onion
¼ small, finely chopped
Extra virgin olive oil
2 teaspoon(s)
Instructions

Bring a pan of water to the boil. Add the green beans and cook for 3 minutes, then add the asparagus tips and peas and cook for a final 2 minutes. Drain and refresh under cold running water then transfer the veg to a serving dish.

In a small bowl, combine the mint, lemon zest, onion and oil. Season, then toss through the vegetables.
