These grown-up lollies will wow your guests at a summer party

Ingredients

0% fat natural Greek yogurt

420 g

Rose Water

2 teaspoon(s)

Honey

1 teaspoon(s), level

Marshmallows

25 g, pink, finely chopped

White Chocolate

100 g, grated

Pistachios

12 individual, lightly toasted and finely chopped

Instructions

  1. Put the yogurt, rosewater and honey in a medium bowl and whisk until smooth. Stir in the marshmallows and 25g grated chocolate.
  2. Spoon the mixture into 6 x 80ml-capacity ice lolly moulds. Insert sticks and freeze for 4 hours or until frozen.
  3. Put 75g chopped white chocolate in a microwave-safe bowl and microwave on medium-high, stirring every 20 seconds, for 1 minute or until melted.
  4. Dip the ice lolly moulds in hot water for 5-10 seconds and gently pull out the lollies. Dip the top quarter of each lolly in the melted chocolate. Sprinkle with the extra grated chocolate and the pistachios.

Notes

Marshmallows stuck together? Dust your hands with cornflour and toss the marshmallows to separate them. To toast the pistachios, cook them in a nonstick frying pan over a medium heat until just golden.
