Yasai yaki soba
PersonalPoints™ per serving
This noodle dish is an absolute must-try if you love Japanese flavours. You can use any vegetables that you have to hand, and if you’re not a fan of chilli, simply leave out the sriracha sauce
Dark Soy Sauce
Soba Noodles, Dry
120 g, prepared as instructed
Calorie controlled cooking spray
Stir fry mixed vegetables
- Put the mirin, soy sauce, sake, yellow bean or miso paste and sriracha sauce, if using, in a small pan and bring to the boil. Reduce the heat and simmer for 2 minutes, then set aside.
- Meanwhile, simmer the noodles in a pan of boiling water for 5 minutes, or until just tender. Drain and set aside.
- Mist a wok or large frying pan with cooking spray and put over a high heat. Add the vegetables and stir-fry for 3 minutes, or until the vegetables are tender. Add the noodles and sauce, and toss to mix. Stir-fry for 2 minutes, making sure everything is well-coated in the sauce. Serve immediately.
Bulk this out by stir-frying 300g thinly sliced skinless chicken breast fillets with the vegetables, if you like.
