This noodle dish is an absolute must-try if you love Japanese flavours. You can use any vegetables that you have to hand, and if you’re not a fan of chilli, simply leave out the sriracha sauce

Ingredients

Mirin

2 tablespoon(s)

Dark soy sauce

2 tablespoon(s)

Sake

2 tablespoon(s)

Miso

2 tablespoon(s)

Sriracha sauce

15 ml

Soba noodles, dry

120 g, prepared as instructed

Calorie controlled cooking spray

Instructions

  1. Put the mirin, soy sauce, sake, yellow bean or miso paste and sriracha sauce, if using, in a small pan and bring to the boil. Reduce the heat and simmer for 2 minutes, then set aside.
  2. Meanwhile, simmer the noodles in a pan of boiling water for 5 minutes, or until just tender. Drain and set aside.
  3. Mist a wok or large frying pan with cooking spray and put over a high heat. Add the vegetables and stir-fry for 3 minutes, or until the vegetables are tender. Add the noodles and sauce, and toss to mix. Stir-fry for 2 minutes, making sure everything is well-coated in the sauce. Serve immediately.

Notes

Bulk this out by stir-frying 300g thinly sliced skinless chicken breast fillets with the vegetables, if you like.
