This crunchy slaw is the ideal side to rich meats


Ingredients
Cabbage
300 g, 150g red and 150g green, finely shredded
Fennel
2 individual, trimmed, cored and very finely sliced, fronds reserved
Apple
1 medium, red skinned, halved cored and very thinly sliced
Lemon
½ zest(s) of 1, finely pared
Lemon Juice, Fresh
4 teaspoon(s), (1 teaspoon for dressing)
Fat Free Natural Yogurt
100 g
Ground Cumin
¼ teaspoon(s), level
Garlic
½ clove(s), crushed
Parsley, fresh
1 tablespoon(s), chopped
Mint, Fresh
1 tablespoon(s), chopped
Instructions

In a bowl, toss together the red and green cabbage, fennel, apple and 1 tablespoon (3 teaspoons) lemon juice, then arrange on a serving platter

Make the dressing: combine the yogurt, cumin, garlic and 1 teaspoon lemon juice. Stir through the parsley and mint, then season to taste

Drizzle the dressing over the slaw then scatter over the reserved fennel fronds and the lemon zest.
