This crunchy slaw is the ideal side to rich meats

Ingredients

Cabbage

300 g, 150g red and 150g green, finely shredded

Fennel

2 individual, trimmed, cored and very finely sliced, fronds reserved

Apple

1 medium, red skinned, halved cored and very thinly sliced

Lemon

½ zest(s) of 1, finely pared

Lemon Juice, Fresh

4 teaspoon(s), (1 teaspoon for dressing)

Fat Free Natural Yogurt

100 g

Ground Cumin

¼ teaspoon(s), level

Garlic

½ clove(s), crushed

Parsley, fresh

1 tablespoon(s), chopped

Mint, Fresh

1 tablespoon(s), chopped

Instructions

  1. In a bowl, toss together the red and green cabbage, fennel, apple and 1 tablespoon (3 teaspoons) lemon juice, then arrange on a serving platter
  2. Make the dressing: combine the yogurt, cumin, garlic and 1 teaspoon lemon juice. Stir through the parsley and mint, then season to taste
  3. Drizzle the dressing over the slaw then scatter over the reserved fennel fronds and the lemon zest.

Notes

You could also add spiralised carrots, thinly sliced red peppers or diced red onions.
