Ingredients
Long grain & wild rice, microwavable
250 g
Lemon
1 zest(s) of 1, finely grated
Lemon Juice, Fresh
1 tablespoon(s)
Parsley, fresh
2 tablespoon(s), chopped
Dill, Fresh
1 tablespoon(s), chopped
Tarragon, fresh
3 teaspoon(s), chopped
Pomegranate
100 g, seeds
Almonds
30 g, toasted, flaked
Olive Oil
1 tablespoon(s)
Ground Cumin
½ teaspoon(s), level
Coriander, Dried
½ teaspoon(s), level, ground
Instructions

Prepare the rice to pack instructions, then transfer to a bowl and set aside to cool. Add the zest, most of the herbs, the pomegranate seeds and almonds; toss to combine

Make the dressing: whisk together all the ingredients in a bowl, then season to taste.

Drizzle the dressing over the rice salad then scatter over the remaining herbs
