Thanks to seasonal, juicy pomegranate seeds, this side is both pretty to look at and packed with plenty of fuss-free flavour

Ingredients

Long grain & wild rice, microwavable

250 g

Lemon

1 zest(s) of 1, finely grated

Lemon Juice, Fresh

1 tablespoon(s)

Parsley, fresh

2 tablespoon(s), chopped

Dill, Fresh

1 tablespoon(s), chopped

Tarragon, fresh

3 teaspoon(s), chopped

Pomegranate

100 g, seeds

Almonds

30 g, toasted, flaked

Olive Oil

1 tablespoon(s)

Ground Cumin

½ teaspoon(s), level

Coriander, Dried

½ teaspoon(s), level, ground

Instructions

  1. Prepare the rice to pack instructions, then transfer to a bowl and set aside to cool. Add the zest, most of the herbs, the pomegranate seeds and almonds; toss to combine
  2. Make the dressing: whisk together all the ingredients in a bowl, then season to taste.
  3. Drizzle the dressing over the rice salad then scatter over the remaining herbs

Notes

If you can’t find microwave wild rice, use microwave brown basmati or wholegrain rice instead.
