Wholewheat spaghetti Bolognese

Ingredients
Olive Oil
2 teaspoon(s)
Onion
1 medium, finely diced
Carrots, raw
2 medium, finely chopped
Extra lean pork mince (5% fat), raw
400 g
Tinned Tomatoes
1 can(s), large, chopped, with basil
Courgette
2 medium, cut into 1 cm cubes
Wholewheat Pasta, dry
240 g, spaghetti
Instructions

Heat the oil in a large pan set over a medium-high heat. Add the onion and carrots and cook, stirring occasionally, for 3 minutes or until soft. Add the mince and cook for 4 minutes until browned.

Add the chopped tomatoes and courgettes to the pan and bring to a boil. Reduce the heat to low and simmer for 45 minutes. Season well.

Meanwhile, cook the spaghetti in boiling salted water to pack instructions. Drain, then toss the pasta through the Bolognese sauce. Divide between plates to serve.
