These pittas are very tasty and are great for lunch or a light meal. Char-grilling brings out the flavour of vegetables, taking a simple recipe to new heights.

Ingredients

Red pepper(s)

1 medium, deseeded and cut into chunks

Courgette

1 medium, sliced

Onion(s)

1 medium, sliced into thin wedges

Calorie controlled cooking spray

4 spray(s)

Cherry Tomatoes

8 individual, halved

Wholemeal Pitta Bread

4 medium

Reduced Fat Houmous

8 tablespoons

Black pepper

teaspoons

Instructions

  1. Preheat a char-grill pan, or preheat the grill to high.
  2. Spray the red pepper, courgette and onion with calorie-controlled cooking spray. Char-grill or grill in batches until browned and tender, turning over to cook both sides. Mix with the cherry tomatoes and leave to cool a little while warming the pittas in a toaster or under the grill.
  3. Cut each pitta in half, split open and fill each half with warm vegetables and 1 tbsp houmous. Sprinkle with black pepper, then serve.
