White bean courgette bites

These fun, bite-sized appetisers are a fun, healthy snack that use courgette rounds as a base instead of bread.


Ingredients
Courgette
2 medium
Calorie controlled cooking spray
4 spray(s)
Garlic granules
½ teaspoon(s)
Salt
½ teaspoon(s)
Cannellini Beans, cooked
1 can(s), large, drained
Tomato
2 medium
Shallots
3 medium
Lemon
¼ zest(s) of 1
Lemon Juice, Fresh
½ teaspoon(s)
Black pepper
1 pinch
Olive Oil
1 teaspoon(s)
Oregano, fresh
½ teaspoon(s), chopped
Basil, fresh
1 tablespoon(s)
Instructions

Slice each courgette into twelve rounds. Using a spoon, carve out a small indentation in each round (do not cut scoop through to other side).

Place the courgette rounds in a single layer on a grill, mist with cooking spray and season with the garlic granules and salt. Grill on High for around 8 minutes, until lightly browned but still firm.

Coarsely mash the beans, then in a medium bowl, mix with the tomatoes, shallots, lemon zest and juice, black pepper, olive oil and oregano.

Divide the bean mixture over the courgette and garnish with basil.
