White bean courgette bites

Cannellini Beans, cooked
1 can(s), large, drained
2 medium, deseeded and finely chopped
3 medium, finely grated
¼ zest(s) of 1
Lemon Juice, Fresh
½ teaspoons, chopped
1 tablespoons, thinly sliced, to garnish
- Slice each courgette into twelve rounds. Using a spoon, carve out a small indentation in each round (do not cut scoop through to other side).
- Place the courgette rounds in a single layer on a grill, mist with cooking spray and season with the garlic granules and salt. Grill on High for around 8 minutes, until lightly browned but still firm.
- Coarsely mash the beans, then in a medium bowl, mix with the tomatoes, shallots, lemon zest and juice, black pepper, olive oil and oregano.
- Divide the bean mixture over the courgette and garnish with basil.
