Ingredients

Green pepper

50 g, diced

Red pepper

50 g, diced

Onion

medium, chopped

Premium ham

40 g, chopped

Calorie controlled cooking spray

Egg, whole, raw

Instructions

  1. Mist a large nonstick pan with cooking spray and put over a medium heat. Add the peppers and onion, cook for 3-5 minutes, stirring until softened and lightly browned.
  2. Stir in the chopped ham and cook for 2 minutes, until heated through.
  3. Whisk the eggs in a bowl and season. Mist a small frying pan with cooking spray and set over a medium heat. Add the eggs and cook, swirling the eggs with a fork as they set.
  4. When the eggs are still slightly runny in the middle, add the veg and ham mixture, then fold the omelette in half and slide onto a plate.
