It may sound like an unlikely combo, but watermelon and prawns work brilliantly together. Their combined sweetness offsets the hot red chilli – try it!

Ingredients

Caster Sugar

3 teaspoon(s)

Thai Fish Sauce

1 tablespoon(s)

Rice Wine Vinegar

1 tablespoon(s)

Lime Juice, Fresh

1 tablespoon(s)

Garlic

1 clove(s), crushed

Chilli, green or red

1 individual, sliced

Mange-tout

125 g

Lettuce

1 individual, cos, leaves torn

Prawns, Peeled & Cooked

1000 g

Watermelon

600 g, cut into wedges

Cucumber

1 individual, extra large, sliced

Coriander, fresh

2 tablespoon(s)

Instructions

  1. Make the dressing. Put the sugar in a small heatproof bowl, add 1 tbsp boiling water and stir to dissolve. Cool. Stir in the remaining dressing ingredients, then set aside.
  2. Prepare a bowl of iced water and set aside. Put the mange tout in a heatproof bowl and cover with boiling water. Leave for 2 minutes, drain, then put in the cold water for 1 minute (see tip). Drain, pat dry with kitchen paper, then slice lengthways.
  3. Arrange the lettuce on plates and top with the prawns, watermelon, cucumber and mange tout. Drizzle with the dressing and top with coriander.

Notes

Plunging blanched green veg into icy water stops the cooking process and keeps the colour nice and bright.
