Vegetable kebabs with satay sauce - spice pots

A great option for the barbecue, oven or grill, these kebabs can be ready in well under 30 minutes.


Ingredients
Coconut milk, tinned
135 ml
Smooth Peanut Butter
2 tablespoon(s), heaped
Soy Sauce
½ tablespoon(s)
Lime Juice, Fresh
1 tablespoon(s)
Agave Syrup
1 tablespoon(s), level
Spice Pots Bhuna Blend
2 teaspoon(s), level
Soy Sauce

Calorie controlled cooking spray
4 spray(s)

Chilli, green or red
1 individual, finely chopped
Garlic
1 clove(s), crushed*

Instructions

To make the marinade, mix together the soy sauce, cooking spray, agave, chilli, garlic and bhuna spice, then rub over the vegetables of your choice.

Thread the vegetables onto 4 skewers and cook under the grill, in the oven or on the barbecue.

Meanwhile make the satay sauce. Simply mix together the coconut milk, peanut butter, soy sauce, lime juice, agave and the bhuna spice in a small pan and bring up to a simmer to thicken.

Serve the skewers drizzled in satay sauce with a crunchy green salad on the side.
