Ingredients

Onion

1 large, chopped

Garlic

1 clove(s), crushed

Potatoes, Raw

200 g, chopped

Vegetable stock cube

1 cube(s), 1 litre stock

Peas, fresh or frozen

800 g

Mint, Fresh

10 sprig(s), roughly chopped

Lemon Juice, Fresh

1 teaspoon(s)

0% fat natural Greek yogurt

6 tablespoon(s)

Instructions

  1. Mist a large pan with cooking spray and fry the onion for 7-8 minutes until soft. Add the garlic and cook for 1 minute.
  2. Add the potatoes and 1 litre stock, bring to a boil and cook for 15 minutes, until the potatoes are tender. Add peas and cook for 5 minutes before stirring in the mint and a squeeze of lemon juice. Season to taste.
  3. Blitz the mixture in a blender (or use a stick blender) then ladle into bowls. Stir 1 tbsp 0% fat natural Greek yoghurt through each serving, then season to taste and serve garnished with fresh mint leaves.

Notes

Freeze the soup in a plastic container for up to a month. Defrost in the fridge overnight before reheating until piping hot.
