Ultimate pea soup
1 large, chopped
1 clove(s), crushed
Vegetable stock cube(s)
1 cube(s), made up with 1 litre hot water
Peas, fresh or frozen
10 sprig(s), roughly chopped
Lemon Juice, Fresh
0% fat natural Greek yogurt
- Mist a large pan with calorie controlled cooking spray and fry the onion for 7-8 minutes until soft. Add the garlic and cook for 1 minute.
- Add the potatoes and 1 litre stock, bring to a boil and cook for 15 minutes, until the potatoes are tender. Add peas and cook for 5 minutes before stirring in the mint and a squeeze of lemon juice. Season to taste.
- Blitz the mixture in a blender (or use a stick blender) then ladle into bowls. Stir 1 tbsp 0% fat natural Greek yoghurt through each serving, then season to taste and serve garnished with fresh mint leaves.
