Ingredients
Extra lean beef mince (5% fat), raw
300 g
Onion

Carrots, raw

Courgette
1 medium
Bacon medallions, raw

Olive Oil

Low fat cheese slice

Burger bun

Lettuce
4 leaf/leaves, small

Instructions

Put the beef, onion, carrot and courgette in a bowl. Season and mix together using your hands. Divide into 4 equal portions, then shape each into an 8cm patty. Chill in the fridge for 20 minutes.

Cook the bacon in a large lidded, nonstick frying pan over a medium heat for 2 minutes each side. Transfer to a plate and cover with foil to keep warm.

Heat the oil in the same pan. Cook the patties over a medium heat for 5 minutes each side or until cooked through. Top each with a cheese slice, cover the pan and cook for 1-2 minutes until the cheese melts.

Lightly toast the rolls, then fill with lettuce, tomato, bacon and patties to serve.
