Instructions

Add ½ teaspoon almond extract to 80ml freshly brewed hot espresso and set aside.

Working quickly, put 2 x 50ml scoops low-calorie salted caramel ice cream (we used Oppo) into small dessert glasses or bowls, then pour over the almond flavoured coffee and serve immediately with 2 sugar-free ice cream wafers on the side of each.
