When burger patties are flattened or smashed into a scorching hot cooking surface like a frying pan or griddle, it creates a delicious crispy crust on the outside which we melt some Cheddar onto for the ultimate fast food fakeaway. Use regular mince turkey--not minced turkey breast in these burgers. You need that little bit of fat to help develop that great crust on the patty.

1 large, cut into 8 slices


  1. Coat a large frying pan with cooking spray. Heat the pan over a medium-high heat. Add the onion slices; and cook for 2-3 minutes per side. Transfer the onion to a plate and cover with plastic wrap.
  2. Divide the turkey mince into 8 equal portions, shaping each into a ball. Place 4 balls in hot frying pan; using a large spatula, smash each ball into a very flat 4-in circle. Sprinkle salt and pepper and cook for 2-3 minutes, until well browned on the bottom. Turn the burgers over, scraping with a spatula to release from the pan; cook for another 2-3 minutes until cooked through. Repeat with the remaining turkey. Arrange the cheese evenly over each of the 4 burgers, top with the remaining 4 burgers.
  3. Spread the mustard over the buns, then layer with the lettuce, onion, burgers, and tomato.
