When a burger is smashed onto a scorching-hot frying pan, it gets a crispy crust, which we top with cheese, for this ultimate fast food fakeaway.

Ingredients
Calorie controlled cooking spray
4 spray(s)
Red onion
½ small, sliced
Extra lean turkey mince, less than 3% fat
500 g, cooked
Light cheese slices
4 slice(s)
Smooth Mustard
4 teaspoon(s), level
Burger bun
4 medium, sliced
Lettuce
4 leaf/leaves, small
Tomato
1 large, cut into 8 slices
Instructions
1
Mist a frying pan with cooking spray and heat over a medium high heat. Add the onion slices and cook for 2-3 minutes on each side, until lightly charred. Set aside.
2
Divide the turkey into 8 equal portions and shape each into a ball. Transfer 4 balls to the hot frying pan. Using a large spatula, smash each ball into a very flat 4-inch circle. Season the patties with salt and pepper and cook for 2-3 minutes on each side, until cooked through. Transfer to a plate. Repeat with the remaining mince. Once cooked, top the patties with the cheese, then top with the other patties and remove from the heat.
3
Spread the mustard onto the cut sides of the burger buns. Build the burgers with the bun bottoms, lettuce, onion, double patty stacks, tomatoes and bun tops.
