Turkey Breast, Skinless, raw
350 g, cut into chunks
1 large, chopped
2 clove(s), crushed
Peppers, All Types
1 medium, (green) deseeded and chopped
2 teaspoons, level
2 tablespoons, level
Kidney Beans, cooked
410 g, rinsed and drained
Vegetable stock cube(s)
1 cube(s), dissolve in 300ml of hot water
1 pinch, and black pepper, freshly ground
Brown Rice, dry
175 g, brown
- Coat a large saucepan with cooking spray and heat. Add the turkey, a handful at a time, so that it seals and browns.
- Add the onion, garlic, pepper, chilli powder, tomatoes, tomato puree, kidney beans and stock. Stir well, bring up to the boil, then cover and reduce the heat. Simmer for 30 minutes, stirring occasionally.
- 25 minutes before you're ready to serve, cook the rice in plenty of lightly salted boiling water until tender. Drain, then rinse with boiling water.
- Season chilli with salt and pepper. Serve with rice.
